Classic Wild Game Spaghetti Sauce


1/2 pound ground game
1/2 pound ground game sausage
1 medium yellow onion…. diced
1 red pepper… diced
1 bunch of fresh parsley…. finely chopped
3 cloves garlic… chopped
1/2 cup dry white wine (whatever bottle of white wine you may have in the fridge to cook with)
1 can diced tomatoes ( I like fire roasted)
1 can pureed tomatoes or 2 tablespoons tomato paste
1/2 teaspoon red pepper flakes or cayenne pepper
Salt and pepper
1 package of whole wheat penne or pasta of your choice


–  Over medium heat cook onion, red pepper, garlic, and parsley until soft

–  Add game meat and cook until no longer pink

–  Add white wine and cook until nearly evaporated

–  Transfer meat mixture to a crock pot

–  Add diced tomatoes, pureed or tomato paste, red pepper flakes, salt, and pepper (NOTE: if using tomato paste add 1 cup water or beef broth)

–  Cook over low heat for 6 to 8 hours or high for 3 to 4

–  Serve over pasta of your choice

–  Garnish with shredded parmesan cheese and fresh parsley
