Harvest Granola

This granola recipe is low in fat but full of flavor and to my standards…..quite healthy.  I’ve decided to start incorporating more non-game recipes because I have a few favorites I’d like to share and I think variety keeps things interesting.

What you Need:

8 cups of oats ( I used a local 7 grain cereal from Wheat Montana)
2 cups of coarsely chopped pecans
1 cup of shredded coconut (I used sweetened)
1 cup of honey
1/2 cup of 100% Maple Syrup
1/2 cup canola oil
2 tablespoons vanilla extract
2 teaspoons cinnamon
1 teaspoon salt
1 cup dried cranberries
1 cup dried blueberries


–  Preheat oven to 315 degrees
–  Combine oats, pecans, coconut, honey, maple syrup, canola oil, vanilla, cinnamon, and salt in large bowl
–  Mix evenly (If you feel like the mixture looks a little dry…add more honey, oil, or syrup as desired

–  Coat a baking sheet with cooking spray or place a piece of parchment paper on it
–  Spread mixture evenly on baking sheet (I used two baking sheets as you don’t want the layer of granola to be higher than a 1/2 inch on sheet)
–  Bake for 20-25 minutes and stir once (Watch and smell …..  you’ll smell the granola when it’s almost done… watch for a few extra minutes until oats are slightly golden)
–  Remove from oven and let cool (oats will cook a touch more after removed from oven… so don’t overcook before removing!)

Ground flax, dried cherries, sunflower seeds, and nutmeg among many other options would be great additions to this granola.  ENJOY!
