Antelope Medallions with Polenta and Gorgonzola


This is going to be a quick post because Mark and I are running out the door to head to Utah for an Elk hunt.  BUT… this dinner was AMAZING!!  So I have to share.

Marinated Antelope Loin Steaks

1/2 cup red wine
1/2 cup balsamic vinegar
Juice from half a lemon
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon olive oil
2 crushed garlic cloves
Salt, Pepper, and Red Pepper (1 teaspoon or as much heat as you want)

Let marinate for a few hours.  Cook over medium high heat for 3 minutes per one side and 1 for the other…. Turn off heat and top with crumbled Gorgonzola Cheese.  Be careful not to add too much cheese as it hides the AMAZING flavor of the marinated antelope.

Polenta

I bought a package (tube) of plain pre-cooked polenta from the grocery store.  It costs just over a dollar and lasts for two meals.  And it’s so easy to use.

Spray pan with a little cooking oil and heat to medium high.  Cook polenta for a few minutes each side until the outside is slightly crispy.

Arrange polenta on a plate, top with steak and cheese, and complete with a wonderful green salad or veggie.  ENJOY!!!!
