Breakfast Burritos


It’s no secret that Breakfast Burritos only require TWO things…. a tortilla and an appetite.  This specific recipe is aptly called a la Leftovers from Last Night’s Dinner Breakfast Burrito.

Flour Tortillas
Eggs
Diced Elk Steak (leftover)
White beans (leftover)
Diced Potatoes
Pepper Jack Cheese
Canned Red and Green chilies (leftover… from way back)
Salt, Pepper, and Seasonings

First start cooking your potatoes – I seasoned with salt, pepper, garlic powder, paprika, and dried herbs from the garden.

Beat eggs and add meat, cheese, chilies, and beans.  Cook until no longer runny.

Warm tortilla over stove top.

Combine and Devour!

NOTE: Had there been more ingredients in the fridge, I would have loved to add fresh spinach, avocado, and tomatoes.
