It’s not Game but it’s GOOD! Low Fat Breakfast Muffins

Occasionally I need a break from game.  This morning was one of those occasions.

I have a weakness for baked goods… muffins, scones, croissants, you name it.  I love them, but they are an indulgence for me.  So one morning months back I decided to see if I could make “good for you” muffins.  First stop on this exploration….Google.

After a few searches, I came across a recipe that looked simple, healthy, and scrumptious. Comments and ratings raved about this recipe and offered alterations to the original ingredients.  So I went for it and LOVED it….as has everyone else!

(Insert Here) Bran Muffins

1 1/2 cup wheat bran (I use Bob’s Red Mill wheat bran)
1 cup nonfat milk
1/2 cup applesauce, nonfat yogurt, shredded carrots or 1 banana (I use bananas)
1 egg
2/3 cup brown sugar or 1/4 cup honey (I go for the honey)
1 teaspoon of vanilla
1/2 cup all purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Dash of cinnamon
1 cup chocolate chips (I usually go for these), blueberries, dried cherries or cranberries, nuts, really anything that sounds good.

-Preheat oven to 375 degrees
-Mix wheat bran and milk in bowl and let sit for 10 minutes
-In large bowl or Kitchen Aid, mix together applesauce(or banana, etc.), egg, honey or sugar, and vanilla
-Add bran mixture and beat or mix
-Add flours and rest of ingredients…the recipes calls for you to sift these things together…but I never do and it works just fine
-Fold in chocolate chips, blueberries, etc.

Bake 15-20 minutes or until tops spring back when tapped.

ENJOY without reservation…these muffins aren’t an indulgence!!!

    Every time you cook these I keep my fingers crossed that you will bring me some! I love them! Do you think almond milk would work in place of nonfat? That’s all I have right now and I want to make them for Trent and Cynthia.

    I just made these and they’re phenomenal! I swapped 1/2 C ground flax seed for some of the wheat bran and they turned out delicious. Definitely a keeper!

    These are great! I love bran muffins and I love the flexibility of this recipe. I used honey for the sugar and yogurt, but I definitely plan to try banana or carrots. I also used two teaspoons of cinnamon, some nutmeg, and some ginger. I’m thinking crystallized ginger would be nice too. And I put in just under 1/3 of a cup of cinnamon chips. I plan to play with this one a lot. Thank you! Delicious and healthy. I blogged it too.
