Whole Wheat Pasta with fresh Veggies and Antelope Sausage


I’ve made this meal several times and it just keeps getting easier and tastes better.  It’s the perfect dish when you need to use up some leftover veggies in the fridge and when you want something light.  Here is what I used to make this meal….but I would say use your favorite vegetables and keep it rather simple:

2-3 cups Whole Wheat pasta
A handful of arugula (this peppery lettuce goes great with pasta)
1 Roma tomato
A handful of peas from the garden – halved
A handful of beans from the garden – halved
2 links of spicy Antelope Sausage (you can substitute any game meat here)
2 cloves of garlic – chopped
1/2 lemon – juiced
Parmesan Cheese – shaved
Salt and Pepper to taste

While your pasta is cooking, slice your sausage into small pieces and throw into a skillet.  I was using pre-cooked sausage so this process was pretty quick.  After a few minutes add garlic and veggies….add tomato last.  Let cook for a minute then add lemon juice and cook for another minute (not an exact science 🙂 )

On a plate, place your handful of arugula.  After straining pasta… immediately put on arugula to wilt just a tad. Add a scoop of veggies and sausage.  Garnish with parmesan shavings, salt and pepper, and a few halved cherry tomatoes.
